Pasta with Sun Dried Tomatoes

500g pasta
Olive oil or canola spray
1 red capsicum sliced lengthwise
100g sliced mushrooms
2 t minced garlic
100g sundried tomatoes (or more!)
1 BBQ chicken, shredded
1 bag baby spinach leaves
4 T reduced fat cheese grated
Ground black pepper
1. Cook pasta in a large pot of boiling water.
2. Meanwhile spray a frypan with canola spray and cook capsicum, mushrooms and garlic and stir fry for 1 minute, then add sundried
tomatoes and chicken. Cook for 2 minutes until just soft.
3. Drain pasta and return to saucepan.
4. Add spinach leaves and cheese and toss until combine. Season with salt and pepper
